My temporary plate expires Sep. 8th and I am planning to move to a different state around Sep. 14th or so. My job hasn't told me where yet; Most likely CA, NV, or HI.

Anyway, would it cause problems for me if I stop riding from Sep 8 - 14 and then get my actual registration in my new residence without ever having gone to the courthouse to get the actual plates in Colorado? I paid city and state taxes at the dealer here, around $600 or so if I recall, but I think I still have to pay registration and plates fees when I go to the courthouse.

I bought a new Honda PCX 150 scooter a couple months ago in WI, then brought it to MN and registered it there. I had to pay the tax, title, license, etc in MN.

I think as long as you took the title to the new state and didn't drive it without plates (illegally) in the state you're departing it would be fine. As long as you're not avoiding paying taxes in a state on purpose, you should be good to go.
